Description

This Copycat Butter Cake is a rich, moist, and velvety cake with a tender crumb and buttery flavor, just like the ones you find in bakeries. Simple ingredients come together for a timeless dessert that pairs perfectly with fresh berries or whipped cream.

  • 1 cup salted butter, room temperature
  • 1 cup granulated sugar, plus more for coating the pan
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 2 teaspoons vanilla extract (or 1 1/2 teaspoons vanilla extract and 1/2 teaspoon almond extract)
  • 3 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 cup buttermilk

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round or square cake pan, then coat lightly with granulated sugar for a crisp exterior.
  2. In a large mixing bowl, cream the butter and sugar together until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Mix in the vanilla extract (and almond extract, if using).
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
  7. Pour the batter into the prepared pan, spreading evenly.
  8. Bake for 40–50 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow to cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
