- 1 cup chopped pecans
- 1 cup shredded coconut (unsweetened)
- 1/2 cup maple syrup
- 1/3 cup coconut oil, melted

- 1/2 teaspoon salt
Instructions
- Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
- In a large bowl, combine oats, chopped pecans, shredded coconut, cinnamon, and salt.
- In a separate bowl, whisk together maple syrup, melted coconut oil, and vanilla extract.
- Pour the wet mixture into the dry ingredients and stir until fully coated.
- Spread mixture evenly on the prepared baking sheet and gently press down with a spatula.
- Bake for 25 to 30 minutes, stirring halfway through, until golden brown.
- Allow granola to cool completely on the baking sheet before breaking into clusters.
- Store in an airtight container at room temperature.
Notes
- Press the granola mixture before baking to encourage clumps.
