- 1 pound ground beef
- 1 (32 oz) bag frozen tater rounds
- 1 small chopped onion
- 2 cups frozen mixed vegetables
- 1 (10.5 oz) can condensed cream of mushroom soup
- 1 ½ cups shredded cheddar cheese
- ½ cup milk
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Preheat oven to 375°F.
- In a large skillet, cook ground beef and chopped onion over medium heat until browned. Drain excess fat.
- In a mixing bowl, combine cream of mushroom soup, milk, garlic powder, salt, and pepper. Stir in frozen vegetables and 1 cup of shredded cheese.
- Lightly grease a 9×13 inch baking dish.
- Spread the cooked beef and onion mixture evenly in the bottom of the dish.
- Pour the soup and vegetable mixture over the beef.
- Arrange the tater rounds evenly on top in a single layer.
- Bake uncovered for 35 to 40 minutes until bubbly and golden brown on top.
- Sprinkle the remaining ½ cup cheese over the top and bake an additional 5 minutes until melted.
- Let rest for 5 minutes before serving.
Notes
- Use lean ground beef to avoid excess grease.
- Broil for the last 2 minutes for extra crispiness.
