- 1 kg potatoes, peeled and cut into chunks
- 3 tablespoons capers, drained
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 small red onion, finely chopped
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Bring a large pot of salted water to a boil.
- In a small bowl, whisk together mayonnaise, Dijon mustard, olive oil, and lemon juice until smooth.
- Add the potatoes to the boiling water and cook for 10 to 12 minutes until fork tender.
- Drain the potatoes and let them cool slightly, then transfer to a large mixing bowl.
- Add capers, red onion, and parsley to the potatoes.
- Pour the dressing over the potatoes and gently fold until evenly coated.
- Season with salt and black pepper, then mix lightly.
- Chill for at least 30 minutes before serving.
