Ingredients

  • 1 kg potatoes, peeled and cut into chunks
  • 3 tablespoons capers, drained
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 small red onion, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Bring a large pot of salted water to a boil.
  2. In a small bowl, whisk together mayonnaise, Dijon mustard, olive oil, and lemon juice until smooth.
  3. Add the potatoes to the boiling water and cook for 10 to 12 minutes until fork tender.
  4. Drain the potatoes and let them cool slightly, then transfer to a large mixing bowl.
  5. Add capers, red onion, and parsley to the potatoes.
  6. Pour the dressing over the potatoes and gently fold until evenly coated.
  7. Season with salt and black pepper, then mix lightly.
  8. Chill for at least 30 minutes before serving.
