Description

A vibrant and flavorful Classic Pesto Pasta topped with creamy burrata cheese and toasted pine nuts for a fresh, elegant, and satisfying dish.


Ingredients

  • 12 oz pasta (spaghetti, linguine, or penne)
  • 1 cup fresh basil leaves
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup toasted pine nuts (plus extra for garnish)
  • 2 cloves garlic
  • 1/3 cup extra virgin olive oil
  • Salt and pepper to taste
  • 2 burrata balls (4 oz each)
  • Optional: cherry tomatoes, halved, for garnish

Instructions

  1. Bring a large pot of salted water to a boil and cook pasta according to package instructions until al dente. Reserve 1/2 cup of the pasta water before draining.
  2. Meanwhile, prepare the pesto: In a food processor, blend basil, Parmesan, pine nuts, garlic, salt, and pepper until finely chopped. With the machine running, slowly drizzle in olive oil until smooth.
  3. Return the drained pasta to the pot and toss with the pesto, adding a splash of reserved pasta water to loosen the sauce as needed.
  4. Divide the pesto-coated pasta among serving bowls and top each with a ball of burrata.
  5. Sprinkle with toasted pine nuts and garnish with cherry tomatoes if desired. Drizzle with extra olive oil and serve immediately.

Notes

  • Toast the pine nuts in a dry skillet over medium heat for 2-3 minutes until golden and fragrant.
  • If you prefer, substitute walnuts or almonds for the pine nuts in the pesto.
  • Break open the burrata just before eating to enjoy its creamy center.
