- 12 oz pasta (spaghetti, linguine, or penne)
- 1 cup fresh basil leaves
- 1/4 cup grated Parmesan cheese
- 1/4 cup toasted pine nuts (plus extra for garnish)
- 2 cloves garlic
- 1/3 cup extra virgin olive oil
- Salt and pepper to taste
- 2 burrata balls (4 oz each)
- Optional: cherry tomatoes, halved, for garnish
Instructions
- Bring a large pot of salted water to a boil and cook pasta according to package instructions until al dente. Reserve 1/2 cup of the pasta water before draining.
- Meanwhile, prepare the pesto: In a food processor, blend basil, Parmesan, pine nuts, garlic, salt, and pepper until finely chopped. With the machine running, slowly drizzle in olive oil until smooth.
- Return the drained pasta to the pot and toss with the pesto, adding a splash of reserved pasta water to loosen the sauce as needed.
- Divide the pesto-coated pasta among serving bowls and top each with a ball of burrata.
- Sprinkle with toasted pine nuts and garnish with cherry tomatoes if desired. Drizzle with extra olive oil and serve immediately.
Notes
- Toast the pine nuts in a dry skillet over medium heat for 2-3 minutes until golden and fragrant.
- If you prefer, substitute walnuts or almonds for the pine nuts in the pesto.
- Break open the burrata just before eating to enjoy its creamy center.
