  • 6 cups brioche bread, cubed
  • 2 cups whole milk
  • 1 cup heavy cream
  • 4 large eggs
  • 3/4 cup white sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons unsalted butter, melted
  • 1/2 cup raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, whisk together eggs, milk, cream, sugar, vanilla, cinnamon, and nutmeg.
  3. Place the bread cubes into the greased dish and scatter raisins throughout if using.
  4. Pour the custard mixture over the bread and press gently to soak. Let it sit for 30 minutes.
  5. Set the dish in a larger pan with hot water to create a water bath and bake for 45–50 minutes, until the top is golden and center is just set.
  6. Brush the top with melted butter and let rest 10 minutes before serving.
