- 1 pound ground beef
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 2 tablespoons tomato paste
- 1 medium yellow onion, finely chopped
- 3 garlic cloves, minced
- 1 cup beef broth
- 1 tablespoon olive oil
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Heat a Dutch oven over medium heat and add olive oil.
- Add chopped onions and garlic. Sauté until translucent.
- Stir in ground beef. Cook until browned and crumbly.
- Sprinkle in chili powder, cumin, paprika, oregano, salt, and pepper. Toast the spices for 1 minute.
- Mix in tomato paste until well combined.
- Add diced tomatoes and beef broth. Stir to combine and bring to a simmer.
- Reduce heat to low, cover partially, and simmer for 30–40 minutes, stirring occasionally.
- Add drained kidney beans and simmer uncovered for another 10 minutes to thicken.
- Serve hot with your favorite toppings like chopped onions, shredded cheese, or cilantro.
Notes
- Let the chili rest before serving for deeper flavor.
- Add a splash of lime juice at the end to brighten the dish.
- Freeze leftovers for up to 3 months.
