Description

A hearty, comforting classic beef chili made with ground beef, kidney beans, and rich spices. Perfect for weeknights, game day, or make-ahead meals.

  • 1 pound ground beef
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup beef broth
  • 1 tablespoon olive oil
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat a Dutch oven over medium heat and add olive oil.
  2. Add chopped onions and garlic. Sauté until translucent.
  3. Stir in ground beef. Cook until browned and crumbly.
  4. Sprinkle in chili powder, cumin, paprika, oregano, salt, and pepper. Toast the spices for 1 minute.
  5. Mix in tomato paste until well combined.
  6. Add diced tomatoes and beef broth. Stir to combine and bring to a simmer.
  7. Reduce heat to low, cover partially, and simmer for 30–40 minutes, stirring occasionally.
  8. Add drained kidney beans and simmer uncovered for another 10 minutes to thicken.
  9. Serve hot with your favorite toppings like chopped onions, shredded cheese, or cilantro.

Notes

  • Let the chili rest before serving for deeper flavor.
  • Add a splash of lime juice at the end to brighten the dish.
  • Freeze leftovers for up to 3 months.
