- 4 cups all-purpose flour
- 2 tablespoons granulated sugar
- 2¼ teaspoons active dry yeast
- 1½ teaspoons salt
- 1½ cups warm water
- 2 tablespoons unsalted butter, melted
- ½ cup baking soda
- ¼ cup brown sugar
- 2 teaspoons ground cinnamon
- 2 tablespoons coarse sugar (optional)
Instructions
- Preheat oven to 425°F and line a baking sheet with parchment paper.
- In a large bowl, mix warm water, yeast, and sugar. Let sit for 5 minutes until foamy.
- Stir in melted butter and salt. Gradually add flour until dough forms. Knead for 5–7 minutes until smooth.
- Let dough rise in a warm spot until doubled, about 30 minutes.
- In a large pot, bring 8 cups water to a boil. Carefully stir in baking soda.
- Divide dough into 8 pieces, roll into ropes, and twist into pretzels. Place on prepared baking sheet.
- Dip each pretzel in the boiling water for 20–30 seconds. Remove with a slotted spoon and place back on the baking sheet.
- Bake for 12–15 minutes until golden brown.
- Mix brown sugar, cinnamon, and coarse sugar in a bowl.
- Brush warm pretzels with melted butter and coat in cinnamon sugar mixture.
Notes
- Use warm water around 110°F to activate the yeast properly.
- Don’t skip the baking soda bath — it’s essential for pretzel texture.
- To make ahead, refrigerate shaped dough overnight and bake the next day.
- Store leftovers in an airtight container and reheat in the oven for best results.
