Description

These Cinnamon-Sugar Pretzel Bites are soft, chewy, and coated in buttery cinnamon-sugar. Made with a simple yeast dough and boiled briefly in a baking soda bath for that signature pretzel flavor, they’re an irresistible snack or dessert everyone will love.

  • 2 1/2 cups (300g) bread flour
  • 1 teaspoon granulated sugar
  • 1 teaspoon table salt
  • 2 1/4 teaspoons (7g) instant yeast
  • 2 tablespoons (28g) unsalted butter, softened
  • 3/4 cup plus 2 tablespoons to 1 cup (199g to 227g) lukewarm water
  • Water Bath:
  • 1 cup (227g) hot water (180°F to 190°F)
  • 1 tablespoon (18g) baking soda
  • Cinnamon-Sugar Topping:
  • 4 tablespoons (57g) unsalted butter, melted
  • 1/4 cup (50g) granulated sugar
  • 1 teaspoon cinnamon
  • Pinch of table salt

Instructions

  1. In a large mixing bowl, combine the bread flour, sugar, salt, yeast, butter, and water. Mix until a soft dough forms.
  2. Knead the dough by hand or with a stand mixer for 6–8 minutes, until smooth and elastic.
  3. Place the dough in a greased bowl, cover, and let rise in a warm place until doubled in size, about 1 hour.
  4. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  5. Punch down the dough and divide into 4 equal pieces. Roll each piece into a rope about 12 inches long, then cut into 1-inch bites.
  6. In a small saucepan, combine the hot water and baking soda, stirring until dissolved. Dip each dough bite briefly in the solution, then place on the prepared baking sheet.
  7. Bake for 12–15 minutes, or until golden brown.
  8. Brush the warm pretzel bites with melted butter. In a small bowl, mix the sugar, cinnamon, and pinch of salt. Toss the pretzel bites in the cinnamon-sugar mixture until coated.
  9. Serve warm, with optional caramel or cream cheese dip.
