- 2 1/4 teaspoons (7g) instant yeast
- 2 tablespoons (28g) unsalted butter, softened
- 3/4 cup plus 2 tablespoons to 1 cup (199g to 227g) lukewarm water
- Water Bath:
- 1 cup (227g) hot water (180°F to 190°F)
- 1 tablespoon (18g) baking soda
- Cinnamon-Sugar Topping:
- 4 tablespoons (57g) unsalted butter, melted
- 1/4 cup (50g) granulated sugar
- 1 teaspoon cinnamon
- Pinch of table salt
Instructions
- In a large mixing bowl, combine the bread flour, sugar, salt, yeast, butter, and water. Mix until a soft dough forms.
- Knead the dough by hand or with a stand mixer for 6–8 minutes, until smooth and elastic.
- Place the dough in a greased bowl, cover, and let rise in a warm place until doubled in size, about 1 hour.
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Punch down the dough and divide into 4 equal pieces. Roll each piece into a rope about 12 inches long, then cut into 1-inch bites.
- In a small saucepan, combine the hot water and baking soda, stirring until dissolved. Dip each dough bite briefly in the solution, then place on the prepared baking sheet.
- Bake for 12–15 minutes, or until golden brown.
- Brush the warm pretzel bites with melted butter. In a small bowl, mix the sugar, cinnamon, and pinch of salt. Toss the pretzel bites in the cinnamon-sugar mixture until coated.
- Serve warm, with optional caramel or cream cheese dip.
