Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt.
- Using a pastry cutter or fingers, cut the cold butter into the flour mixture until it resembles coarse crumbs.
- In another bowl, beat the egg, vanilla extract, and half of the sugar together.
- Combine the wet ingredients with the dry ingredients, mixing until a dough forms.
- Roll the dough into 1-inch balls and place them on the baking sheet, spaced about 2 inches apart.
- Mix the remaining sugar with the ground cinnamon in a small bowl.
- Flatten each dough ball slightly and sprinkle generously with the cinnamon sugar mixture.
- Bake for 12-15 minutes or until edges are golden brown.
- Cool on a wire rack before serving.
