Description

Flaky, buttery homemade cinnamon pop tarts filled with warm brown sugar and cinnamon, topped with a smooth vanilla glaze. A nostalgic breakfast treat made completely from scratch with simple pantry ingredients.


Ingredients

  • 2 1/2 cups all purpose flour
  • 2 tablespoons granulated sugar (for dough)
  • 1 tablespoon granulated sugar (for filling)
  • 1/2 cup packed brown sugar
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 2 tablespoons milk (for dough)
  • 1 tablespoon milk (for glaze)
  • 1 large egg
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix flour, 2 tablespoons granulated sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs. Stir in 2 tablespoons milk until dough just comes together.
  3. In a separate bowl, combine brown sugar, 1 tablespoon granulated sugar, and cinnamon to make the filling.
  4. Roll dough on a lightly floured surface to about 1/8 inch thickness. Cut into even rectangles.
  5. Spoon cinnamon filling onto half of the rectangles, leaving a small border. Brush edges with beaten egg, place remaining rectangles on top, and seal edges with a fork.
  6. Transfer pastries to prepared baking sheet and bake for 20 to 25 minutes until golden brown.
  7. Whisk powdered sugar, 1 tablespoon milk, and vanilla extract until smooth. Spread glaze over slightly cooled pastries and allow to set before serving.

Notes

  • Keep butter cold for flaky layers.
  • Do not overfill to prevent leaking during baking.
  • Chill assembled pastries for 10 minutes before baking if kitchen is warm.
  • Store leftovers in an airtight container for up to 3 days.
