- 2 1/2 cups all purpose flour
- 2 tablespoons granulated sugar (for dough)
- 1 tablespoon granulated sugar (for filling)
- 1/2 cup packed brown sugar
- 1 tablespoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup unsalted butter, cold and cubed
- 2 tablespoons milk (for dough)
- 1 tablespoon milk (for glaze)
- 1 large egg
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 375°F and line a baking sheet with parchment paper.
- In a large bowl, mix flour, 2 tablespoons granulated sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs. Stir in 2 tablespoons milk until dough just comes together.
- In a separate bowl, combine brown sugar, 1 tablespoon granulated sugar, and cinnamon to make the filling.
- Roll dough on a lightly floured surface to about 1/8 inch thickness. Cut into even rectangles.
- Spoon cinnamon filling onto half of the rectangles, leaving a small border. Brush edges with beaten egg, place remaining rectangles on top, and seal edges with a fork.
- Transfer pastries to prepared baking sheet and bake for 20 to 25 minutes until golden brown.
- Whisk powdered sugar, 1 tablespoon milk, and vanilla extract until smooth. Spread glaze over slightly cooled pastries and allow to set before serving.
Notes
- Keep butter cold for flaky layers.
- Do not overfill to prevent leaking during baking.
- Chill assembled pastries for 10 minutes before baking if kitchen is warm.
- Store leftovers in an airtight container for up to 3 days.
