Description

Cinnamon Coffee Crinkles are soft, chewy cookies with rich coffee undertones and warm cinnamon spice. Rolled in powdered sugar for that classic crackled look, these cookies are a cozy treat perfect with a hot drink or as a holiday favorite.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon instant coffee or espresso powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for rolling)

Instructions

  1. In a medium bowl, whisk together flour, cocoa powder, cinnamon, instant coffee, baking powder, and salt. Set aside.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture, mixing until fully combined.
  5. Cover the dough and refrigerate for at least 1 hour (or overnight) until firm.
  6. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Scoop tablespoon-sized balls of dough and roll each in powdered sugar to coat generously.
  8. Place cookies 2 inches apart on the baking sheet and bake for 10–12 minutes, or until cracked and set at the edges but soft in the center.
  9. Cool on the sheet for 5 minutes before transferring to a wire rack.

Notes

  • Chill the dough thoroughly to help create deeper crinkles.
  • Add more instant coffee for a stronger mocha flavor.
  • Store cookies in an airtight container for up to 5 days.
  • These cookies freeze well — freeze after baking or freeze dough balls before baking.
