Description

Juicy and flavorful chicken thighs marinated in lime, garlic, and spices, then cooked to golden perfection and finished with fresh cilantro for a bright and satisfying meal.

Ingredients

Scale
  • 6 bone-in, skin-on chicken thighs
  • 1 cup fresh cilantro, chopped
  • 3 whole limes, juiced
  • 4 garlic cloves, minced
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder

Instructions

  1. Preheat a large skillet over medium heat.
  2. In a mixing bowl, combine olive oil, lime juice, minced garlic, salt, black pepper, cumin, and chili powder.
  3. Lightly oil the skillet if needed and ensure it is hot.
  4. Coat the chicken thighs evenly with the marinade.
  5. Place chicken skin side down and cook for 7 to 8 minutes, then flip and cook another 10 to 12 minutes until fully cooked and golden.
  6. Sprinkle chopped cilantro over the chicken and add an extra squeeze of lime juice.
  7. Serve warm and enjoy.

Notes

  • Marinate the chicken for at least 30 minutes for deeper flavor.
  • Use fresh lime juice for the best taste.
  • Avoid overcrowding the pan to achieve a good sear.
