- 3 large eggs
- 1 cup whole milk

- 1 pint vanilla ice cream
Instructions
- Heat a skillet or griddle over medium heat and melt butter as it warms.
- In a bowl, whisk together eggs, milk, vanilla extract, and salt.
- Pour the custard into a shallow dish and mix cinnamon and sugar in another small bowl.
- Dip each slice of brioche in the custard, letting it soak briefly on both sides.
- Cook the slices in the skillet until golden on each side, about 2–3 minutes per side.
- While warm, toss the cooked slices in the cinnamon sugar mixture to coat.
- Let the French toast slices cool slightly. Scoop ice cream onto one slice and top with another.
- Gently press to form a sandwich and serve immediately or freeze for 10 minutes to firm.
