Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, beat softened butter and 1/2 cup powdered sugar until fluffy. Mix in vanilla extract.
- Gradually add flour and salt, mixing until combined. Fold in chopped pecans.
- Form dough into 1-inch balls and place on prepared baking sheet.
- Bake for 12–15 minutes until bottoms are lightly golden. Tops should remain pale.
- While warm, roll cookies in powdered sugar, then transfer to a wire rack to cool.
- Once cooled completely, roll cookies in powdered sugar again before serving.
