Description

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup powdered sugar (plus extra for rolling)
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 3/4 cup chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat softened butter and 1/2 cup powdered sugar until fluffy. Mix in vanilla extract.
  3. Gradually add flour and salt, mixing until combined. Fold in chopped pecans.
  4. Form dough into 1-inch balls and place on prepared baking sheet.
  5. Bake for 12–15 minutes until bottoms are lightly golden. Tops should remain pale.
  6. While warm, roll cookies in powdered sugar, then transfer to a wire rack to cool.
  7. Once cooled completely, roll cookies in powdered sugar again before serving.
