- 1 and 1/4 cups all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1 tablespoon milk
- 1 cup whole milk (for custard)

Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, and salt.
- In a large bowl, cream butter and sugar until light and fluffy. Beat in egg yolk, vanilla, and milk until well combined.
- Gradually add dry ingredients to wet ingredients, mixing until a soft dough forms.
- Roll tablespoon-sized amounts of dough into balls and place on baking sheet. Make a deep indentation in the center of each ball using your thumb or the back of a spoon.
- Bake for 10–12 minutes and allow to cool on a wire rack.
- While cookies bake, prepare custard: In a saucepan, whisk together milk, egg yolks, sugar, and cornstarch. Cook over medium heat, stirring constantly, until thickened. Remove from heat and stir in vanilla. Cool completely.
- Spoon cooled custard into cookie centers. Chill slightly before serving if desired.
Notes
- Chill the dough before shaping to reduce spreading.
- Use a piping bag for cleaner custard filling.
- Top with shaved chocolate or cocoa powder for garnish.
