Silky, rich, and impossibly creamy, this Chocolate Silken Tofu Mousse blends melted dark chocolate with velvety silken tofu for a decadent dessert that sets beautifully in the fridge and feels luxurious in every spoonful.
Ingredients
- Silken tofu, drained: 14 oz (400 g)
- Dark chocolate, chopped: 7 oz (200 g)
- Unsweetened cocoa powder: 2 tablespoons
- Maple syrup or agave nectar: 3 tablespoons
- Vanilla extract: 1 teaspoon
- Fine sea salt: pinch
- Optional toppings, fresh berries, shaved chocolate, or whipped coconut cream: as desired
Instructions
- Prepare the melting setup, set a heatproof bowl over a pot of gently simmering water or use a microwave-safe bowl.
- Melt the chocolate, stir until smooth and glossy, then let it cool for 1 to 2 minutes.
- Blend the base, add silken tofu, cocoa powder, maple syrup, vanilla, and salt to a blender, process until completely silky, scraping down the sides.
- Incorporate the chocolate, pour in the melted chocolate and blend again until the mixture is uniformly smooth and thick.
- Portion and chill, divide the mousse into 6 small glasses or ramekins, cover, and refrigerate for at least 2 hours until set.
- Finish and serve, top with berries or shaved chocolate and enjoy cold.

- Note Chill time helps the mousse firm up and develop its velvety texture.
- For deeper flavor, add 1 teaspoon instant espresso powder with the cocoa.
- For extra richness, swirl in 1 tablespoon warm nut butter before chilling.
