- 1 lb flank steak or sirloin, thinly sliced
- 2 tablespoons olive oil
- 2 teaspoons chipotle chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 2 cups cooked white or brown rice
- 1 cup canned black beans, rinsed and drained
- 1 cup corn kernels (fresh, canned, or frozen)
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1 avocado, sliced
- 1/4 cup chopped fresh cilantro
- Lime wedges, for serving
- Sour cream or Greek yogurt, for topping (optional)
Instructions
- In a bowl, combine chipotle chili powder, cumin, garlic powder, salt, and pepper. Toss the sliced beef in the mixture until evenly coated.
- Heat olive oil in a large skillet over medium-high heat. Add the beef and cook for 5–7 minutes, or until browned and cooked through. Set aside.
- Warm the black beans and corn in the microwave or on the stovetop if desired.
- To assemble bowls, divide cooked rice among 4 bowls. Top with chipotle beef, black beans, corn, tomatoes, red onion, and avocado slices.
- Sprinkle with chopped cilantro and serve with lime wedges and sour cream or Greek yogurt, if using.
