Description

Chipotle Beef Bowl is a flavorful and satisfying meal featuring tender chipotle-seasoned beef served over rice with black beans, corn, fresh veggies, and creamy toppings. It’s a customizable and hearty dish perfect for lunch or dinner.


Ingredients

  • 1 lb flank steak or sirloin, thinly sliced
  • 2 tablespoons olive oil
  • 2 teaspoons chipotle chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups cooked white or brown rice
  • 1 cup canned black beans, rinsed and drained
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1 avocado, sliced
  • 1/4 cup chopped fresh cilantro
  • Lime wedges, for serving
  • Sour cream or Greek yogurt, for topping (optional)

Instructions

  1. In a bowl, combine chipotle chili powder, cumin, garlic powder, salt, and pepper. Toss the sliced beef in the mixture until evenly coated.
  2. Heat olive oil in a large skillet over medium-high heat. Add the beef and cook for 5–7 minutes, or until browned and cooked through. Set aside.
  3. Warm the black beans and corn in the microwave or on the stovetop if desired.
  4. To assemble bowls, divide cooked rice among 4 bowls. Top with chipotle beef, black beans, corn, tomatoes, red onion, and avocado slices.
  5. Sprinkle with chopped cilantro and serve with lime wedges and sour cream or Greek yogurt, if using.
