Description

Soft flour tortillas stuffed with juicy seasoned chicken and a creamy, crunchy coleslaw for a quick, feel-good meal that’s fresh, balanced, and totally satisfying.


Ingredients

  • 2 medium chicken breasts, cooked and thinly sliced (about 1 lb or 450 g)
  • 4 large flour tortillas, 10 inch
  • 2 cups shredded green cabbage (about 140 g)
  • 1 cup grated carrots (about 100 g)
  • 1/2 cup mayonnaise (120 g)
  • 1/4 cup plain Greek yogurt (60 g)
  • 1 tbsp apple cider vinegar (15 ml)
  • 1 tsp granulated sugar (4 g)
  • 1/2 tsp fine salt (3 g), divided
  • 1/4 tsp black pepper (1 g), divided
  • 1/2 tsp paprika (1.5 g)
  • 1 tbsp olive oil (15 ml), if cooking chicken fresh

Instructions

  1. Season Chicken: If cooking fresh, pat chicken dry, rub with olive oil, 1/4 tsp salt, 1/8 tsp pepper, and paprika.
  2. Cook Chicken: Heat a skillet over medium heat and cook chicken 4 to 6 minutes per side until golden and cooked through, then rest and slice thinly.
  3. Make Coleslaw: In a mixing bowl combine cabbage, carrots, mayonnaise, Greek yogurt, apple cider vinegar, sugar, 1/4 tsp salt, and 1/8 tsp pepper. Toss until creamy.
  4. Warm Tortillas: Briefly warm tortillas in a dry skillet or microwave until soft and pliable.
  5. Assemble: Lay a warm tortilla flat, add a generous layer of coleslaw down the center, then top with sliced chicken.
  6. Roll: Fold in the sides, roll up tightly, and if desired toast the seam side down in the skillet for 1 to 2 minutes.
  7. Serve: Slice each wrap in half and serve immediately with extra slaw on the side.

Notes

  • Chill the coleslaw 20 to 30 minutes for deeper flavor and extra crunch.
  • Do not overfill wraps to keep rolling neat and easy.
  • For extra brightness add a squeeze of lemon or lime just before serving.
  • Use whole wheat or gluten free tortillas if preferred.
  • Lighten the slaw by increasing Greek yogurt and reducing mayonnaise.
