- 1 1/2 cups refried beans
- 2 cups shredded lettuce
- 2 medium Roma tomatoes, diced

- 1/3 cup Mexican crema
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
Instructions
- Preheat the oven to 400°F. Lightly brush both sides of the corn tortillas with olive oil and place them on a sheet pan in a single layer.
- In a skillet over medium heat, combine the shredded chicken with chili powder, cumin, garlic powder, 1/2 teaspoon salt, and black pepper. Cook for 3 to 4 minutes, stirring, until warmed through.
- Heat the refried beans in a small saucepan or microwave-safe bowl until smooth and spreadable.
- Bake the tortillas for 8 to 10 minutes, flipping once halfway through, until crisp and golden.
- Spread each tortilla with refried beans, then top with the seasoned chicken.
- Return the topped tortillas to the oven for 2 to 3 minutes if desired to warm everything through.
- Top with shredded lettuce, diced tomatoes, avocado slices, crumbled queso fresco, Mexican crema, chopped cilantro, and a squeeze of lime. Serve immediately.
Notes
- Assemble just before serving to keep the tortillas crisp.
- Rotisserie chicken works well as a quick shortcut.
- Sour cream mixed with a little lime juice can replace Mexican crema.
- Store toppings separately for the best leftover texture.
