Description

Crispy corn tortillas layered with refried beans, seasoned shredded chicken, fresh lettuce, tomatoes, avocado, queso fresco, and crema for a vibrant and satisfying meal.

  • 8 small corn tortillas
  • 2 tablespoons olive oil
  • 3 cups cooked shredded chicken
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper
  • 1 1/2 cups refried beans
  • 2 cups shredded lettuce
  • 2 medium Roma tomatoes, diced
  • 1 large avocado, sliced
  • 1/2 cup queso fresco, crumbled
  • 1/3 cup Mexican crema
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. Preheat the oven to 400°F. Lightly brush both sides of the corn tortillas with olive oil and place them on a sheet pan in a single layer.
  2. In a skillet over medium heat, combine the shredded chicken with chili powder, cumin, garlic powder, 1/2 teaspoon salt, and black pepper. Cook for 3 to 4 minutes, stirring, until warmed through.
  3. Heat the refried beans in a small saucepan or microwave-safe bowl until smooth and spreadable.
  4. Bake the tortillas for 8 to 10 minutes, flipping once halfway through, until crisp and golden.
  5. Spread each tortilla with refried beans, then top with the seasoned chicken.
  6. Return the topped tortillas to the oven for 2 to 3 minutes if desired to warm everything through.
  7. Top with shredded lettuce, diced tomatoes, avocado slices, crumbled queso fresco, Mexican crema, chopped cilantro, and a squeeze of lime. Serve immediately.

Notes

  • Assemble just before serving to keep the tortillas crisp.
  • Rotisserie chicken works well as a quick shortcut.
  • Sour cream mixed with a little lime juice can replace Mexican crema.
  • Store toppings separately for the best leftover texture.
