Description
Chicken Tetrazzini is a creamy, comforting pasta casserole made with tender chicken, spaghetti, and a rich mushroom cream sauce, topped with cheese and baked to golden perfection.

- 12 oz spaghetti or linguine
- 3 cups cooked chicken, shredded
- 2 tablespoons butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1 cup heavy cream or milk
- 1/2 cup sour cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/4 teaspoon ground nutmeg
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs (optional topping)
- 2 tablespoons olive oil or melted butter (if using breadcrumbs)
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
- Cook the pasta according to package directions until al dente. Drain and set aside.
- In a large skillet, melt butter over medium heat. Add onions and cook until softened. Stir in garlic and mushrooms and sauté until mushrooms are tender.
- Sprinkle flour over the vegetables and stir to coat. Cook for 1-2 minutes, then gradually whisk in chicken broth and cream. Stir until thickened, about 5 minutes.
- Reduce heat to low and add sour cream, salt, pepper, thyme, and nutmeg. Mix in the cooked chicken.
- Combine the cooked pasta and sauce mixture. Pour into the prepared baking dish and sprinkle mozzarella and Parmesan over the top.
- If using breadcrumbs, mix them with olive oil or melted butter and sprinkle over the cheese.
- Bake for 25–30 minutes, or until bubbly and golden on top. Let rest 5 minutes before serving.
Notes
- Use rotisserie chicken to save time on prep.
- Can be assembled ahead and refrigerated overnight before baking.
- Add peas or spinach for extra veggies and color.
