Description

Chicken Tetrazzini is a creamy, comforting pasta casserole made with tender chicken, spaghetti, and a rich mushroom cream sauce, topped with cheese and baked to golden perfection.


Ingredients

  • 12 oz spaghetti or linguine
  • 3 cups cooked chicken, shredded
  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream or milk
  • 1/2 cup sour cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon ground nutmeg
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (optional topping)
  • 2 tablespoons olive oil or melted butter (if using breadcrumbs)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. Cook the pasta according to package directions until al dente. Drain and set aside.
  3. In a large skillet, melt butter over medium heat. Add onions and cook until softened. Stir in garlic and mushrooms and sauté until mushrooms are tender.
  4. Sprinkle flour over the vegetables and stir to coat. Cook for 1-2 minutes, then gradually whisk in chicken broth and cream. Stir until thickened, about 5 minutes.
  5. Reduce heat to low and add sour cream, salt, pepper, thyme, and nutmeg. Mix in the cooked chicken.
  6. Combine the cooked pasta and sauce mixture. Pour into the prepared baking dish and sprinkle mozzarella and Parmesan over the top.
  7. If using breadcrumbs, mix them with olive oil or melted butter and sprinkle over the cheese.
  8. Bake for 25–30 minutes, or until bubbly and golden on top. Let rest 5 minutes before serving.

Notes

  • Use rotisserie chicken to save time on prep.
  • Can be assembled ahead and refrigerated overnight before baking.
  • Add peas or spinach for extra veggies and color.
