Description

Chicken Scampi with Garlic Parmesan Rice is a flavorful and comforting dish featuring tender chicken sautéed in a buttery garlic sauce served over creamy Parmesan-infused rice — perfect for an easy weeknight dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tablespoons unsalted butter
  • 1/4 cup chopped fresh parsley
  • 1 cup long-grain white rice
  • 2 cups chicken broth (for rice)
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil (for rice)
  • Salt to taste (for rice)

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Cook chicken until golden and cooked through, about 5-7 minutes per side. Remove and keep warm.
  3. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  4. Add chicken broth and lemon juice; bring to a simmer and cook for 2-3 minutes to reduce slightly.
  5. Stir in butter and chopped parsley until melted and combined.
  6. Meanwhile, heat 2 tablespoons olive oil in a saucepan over medium heat. Add rice and toast for 2 minutes.
  7. Add 2 cups chicken broth and salt; bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until rice is cooked.
  8. Remove rice from heat and stir in grated Parmesan cheese.
  9. Serve chicken over the garlic Parmesan rice and spoon the garlic lemon sauce over the top.

Notes

  • Use freshly grated Parmesan for the best flavor.
  • For extra zest, add lemon zest to the sauce.
