- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 2 tablespoons unsalted butter
- 1/4 cup chopped fresh parsley
- 1 cup long-grain white rice
- 2 cups chicken broth (for rice)
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil (for rice)
- Salt to taste (for rice)
Instructions
- Season chicken breasts with salt and pepper.
- Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Cook chicken until golden and cooked through, about 5-7 minutes per side. Remove and keep warm.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
- Add chicken broth and lemon juice; bring to a simmer and cook for 2-3 minutes to reduce slightly.
- Stir in butter and chopped parsley until melted and combined.
- Meanwhile, heat 2 tablespoons olive oil in a saucepan over medium heat. Add rice and toast for 2 minutes.
- Add 2 cups chicken broth and salt; bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until rice is cooked.
- Remove rice from heat and stir in grated Parmesan cheese.
- Serve chicken over the garlic Parmesan rice and spoon the garlic lemon sauce over the top.
