Chicken Scampi Stuffed Pasta Shells combine the garlicky, buttery flavors of classic shrimp scampi with tender chicken and creamy cheese filling, all tucked into jumbo pasta shells and baked to perfection. It’s a comforting and flavorful twist on Italian-American favorites.

- 20 jumbo pasta shells
- 2 cups cooked, shredded chicken
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
- Salt and black pepper, to taste
- 2 tbsp olive oil
- 4 cloves garlic, minced
- ½ tsp red pepper flakes (optional)
- ½ cup dry white wine or chicken broth
- Juice of 1 lemon
- 4 tbsp unsalted butter
- Extra parsley and lemon zest, for garnish
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Cook the pasta shells according to package directions until al dente. Drain and set aside to cool.
- In a bowl, mix shredded chicken, ricotta, mozzarella, Parmesan, chopped parsley, salt, and pepper. Set aside.
- In a skillet, heat olive oil over medium heat. Add garlic and red pepper flakes; cook for 1–2 minutes until fragrant.
- Pour in white wine or chicken broth and lemon juice. Simmer for 2–3 minutes, then add butter and stir until melted. Remove from heat.
- Stuff each pasta shell with the chicken and cheese mixture and arrange in the prepared baking dish.
- Pour the garlic butter sauce over the shells evenly.
- Cover with foil and bake for 20 minutes. Uncover and bake an additional 5–10 minutes until bubbly and lightly golden.
- Garnish with extra parsley and lemon zest before serving.
Notes
- Great for using up leftover chicken or rotisserie chicken.
- Substitute shrimp for chicken to make a more traditional scampi version.
- Can be made ahead and refrigerated before baking.
- Serve with garlic bread and a fresh green salad for a full meal.
