- 4 boneless, skinless chicken breasts
- 1/2 cup spinach, chopped
- 1/4 cup sun-dried tomatoes, chopped
- 1/4 cup feta cheese, crumbled
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 1 tablespoon butter, melted
Instructions
- Preheat the oven to 375°F (190°C).
- Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness using a meat mallet or rolling pin.
- In a small bowl, combine the spinach, sun-dried tomatoes, and feta cheese.
- Season the chicken breasts with garlic powder, oregano, salt, and pepper on both sides.
- Place a spoonful of the spinach and feta mixture in the center of each chicken breast and roll it up tightly, securing with toothpicks if necessary.
- In a shallow dish, combine the grated Parmesan cheese and breadcrumbs. Roll each chicken roulade in the breadcrumb mixture to coat.
- Heat olive oil in a large skillet over medium-high heat. Brown the chicken roulades on all sides for 3–4 minutes.
- Transfer the browned chicken to a baking dish and brush with melted butter. Bake for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Remove toothpicks and serve hot, garnished with extra parsley or herbs if desired.
Notes
- For extra flavor, you can add herbs like basil or thyme to the filling.
- Serve with roasted vegetables or a side salad for a complete meal.
- If you prefer a different filling, try using ricotta cheese or mozzarella instead of feta.
