Description

A cozy and comforting stew made with tender chicken thighs, sweet pumpkin, aromatic spices, and a rich tomato-based broth. Perfect for chilly nights or anytime you crave a warm, nourishing meal.


Ingredients

  • 1.5 pounds raw chicken thighs, boneless and skinless
  • 3 cups pumpkin, peeled and cubed
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 cup diced tomatoes
  • 3 cups chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onions and sauté until translucent, about 5 minutes.
  3. Stir in garlic and cumin, cooking for another minute.
  4. Push onions aside and add chicken thighs, searing both sides until lightly browned.
  5. Add pumpkin cubes, diced tomatoes, and chicken broth.
  6. Season with salt and pepper and stir to combine.
  7. Bring to a boil, then reduce heat, cover, and simmer for 35–40 minutes until chicken is cooked and pumpkin is tender.
  8. Stir in chopped parsley and adjust seasoning as needed.
  9. Serve hot with desired sides.

Notes

  • For a deeper flavor, roast the pumpkin before adding it to the stew.
  • Bone-in chicken can be used for extra flavor.
  • Leftovers taste even better the next day.
  • Can be frozen for up to 3 months.
