- 1.5 pounds raw chicken thighs, boneless and skinless
- 3 cups pumpkin, peeled and cubed
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 cup diced tomatoes
- 3 cups chicken broth
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onions and sauté until translucent, about 5 minutes.
- Stir in garlic and cumin, cooking for another minute.
- Push onions aside and add chicken thighs, searing both sides until lightly browned.
- Add pumpkin cubes, diced tomatoes, and chicken broth.
- Season with salt and pepper and stir to combine.
- Bring to a boil, then reduce heat, cover, and simmer for 35–40 minutes until chicken is cooked and pumpkin is tender.
- Stir in chopped parsley and adjust seasoning as needed.
- Serve hot with desired sides.
Notes
- For a deeper flavor, roast the pumpkin before adding it to the stew.
- Bone-in chicken can be used for extra flavor.
- Leftovers taste even better the next day.
- Can be frozen for up to 3 months.
