Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 medium yellow onion, diced
  • 2 stalks celery, sliced
  • 2 medium carrots, chopped
  • 3 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 2 medium russet potatoes, peeled and diced
  • 2 cups cooked chicken breast, shredded
  • 1 cup frozen peas
  • 1 cup heavy cream
  • 1 teaspoon fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium heat. Add olive oil and butter.
  2. Sauté onion, celery, and carrots for 5 minutes until softened. Add garlic and cook for 1 minute.
  3. Stir in flour to form a roux. Cook for 2 minutes until golden.
  4. Slowly whisk in chicken broth. Add diced potatoes and bring to a boil.
  5. Reduce heat and simmer 15–20 minutes until potatoes are tender.
  6. Stir in shredded chicken, peas, cream, thyme, salt, and pepper. Simmer 5 more minutes.
  7. Adjust seasoning as needed. Let rest 5–10 minutes before serving.
