Description

A delicious twist on classic chicken parmesan, these chicken meatballs are baked to perfection and topped with marinara sauce and melted mozzarella.


Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1 large egg
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 1 1/2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • Olive oil for greasing

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a baking sheet with olive oil.
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, garlic powder, oregano, basil, egg, parsley, salt, and pepper. Mix until well combined.
  3. Form the mixture into 12-16 meatballs and place them on the prepared baking sheet.
  4. Bake for 15-20 minutes, or until meatballs are golden brown and cooked through.
  5. While the meatballs are baking, heat marinara sauce in a saucepan over low heat.
  6. Once the meatballs are done, remove from the oven and spoon a little marinara sauce over each meatball. Top with shredded mozzarella cheese.
  7. Return to the oven for an additional 5 minutes or until the cheese is melted and bubbly.
  8. Serve the chicken parm meatballs with extra marinara sauce and garnish with chopped parsley.

Notes

  • Serve these meatballs with spaghetti, a side salad, or crusty bread for a complete meal.
  • If you prefer a crispy crust, broil the meatballs for the last 2-3 minutes of baking.
  • Feel free to substitute ground turkey for the chicken for a leaner version.
