- 8 ounces cremini mushrooms, sliced
- 3 garlic cloves, minced
- 1 small yellow onion, finely chopped
- 1 cup chicken broth
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 1/2 teaspoon black pepper
- 3/4 teaspoon salt
- 1/2 teaspoon dried thyme
- Fresh parsley, for garnish
Instructions
- Preheat Your Equipment: Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil.
- Combine Ingredients: Dredge the chicken thighs lightly in flour, shaking off excess. Season with salt and pepper.
- Prepare Your Cooking Vessel: In the hot skillet, cook the chicken for about 4–5 minutes per side until golden and cooked through. Remove and set aside.
- Assemble the Dish: In the same skillet, add remaining olive oil and butter. Sauté onions and garlic for 2–3 minutes, then add mushrooms and cook until browned.
- Cook to Perfection: Add chicken broth and thyme, scraping up any browned bits. Simmer the sauce and let it reduce slightly.
- Finishing Touches: Return the chicken to the pan, spoon sauce over it, and simmer together for 5 more minutes.
- Serve and Enjoy: Plate the chicken, pour sauce and mushrooms on top, and garnish with parsley.

- Use pre-sliced mushrooms to save time.
- A splash of extra broth can loosen the sauce if too thick.
