Description

A comforting and elegant dish of pan-seared chicken thighs smothered in a rich mushroom Marsala-style sauce. Perfect for weeknight dinners or cozy gatherings.

  • 1.5 pounds boneless skinless chicken thighs
  • 8 ounces cremini mushrooms, sliced
  • 3 garlic cloves, minced
  • 1 small yellow onion, finely chopped
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon black pepper
  • 3/4 teaspoon salt
  • 1/2 teaspoon dried thyme
  • Fresh parsley, for garnish

Instructions

  1. Preheat Your Equipment: Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil.
  2. Combine Ingredients: Dredge the chicken thighs lightly in flour, shaking off excess. Season with salt and pepper.
  3. Prepare Your Cooking Vessel: In the hot skillet, cook the chicken for about 4–5 minutes per side until golden and cooked through. Remove and set aside.
  4. Assemble the Dish: In the same skillet, add remaining olive oil and butter. Sauté onions and garlic for 2–3 minutes, then add mushrooms and cook until browned.
  5. Cook to Perfection: Add chicken broth and thyme, scraping up any browned bits. Simmer the sauce and let it reduce slightly.
  6. Finishing Touches: Return the chicken to the pan, spoon sauce over it, and simmer together for 5 more minutes.
  7. Serve and Enjoy: Plate the chicken, pour sauce and mushrooms on top, and garnish with parsley.

Notes

  • Use pre-sliced mushrooms to save time.
  • A splash of extra broth can loosen the sauce if too thick.
