- 1 pound ground chicken
- 16 large butter lettuce leaves
- 1/2 cup finely diced carrots
- 3 tablespoons chopped green onions
- 1/2 cup chopped water chestnuts
- 3 tablespoons soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 teaspoon cornstarch mixed with 1 tablespoon water
Instructions
- Heat a large skillet over medium high heat.
- In a small bowl combine soy sauce, hoisin sauce, rice vinegar, sesame oil, and the cornstarch slurry.
- Add a small drizzle of oil to the skillet then cook garlic and ginger for about 30 seconds until fragrant.
- Add ground chicken and cook while breaking it apart with a spoon until mostly cooked.
- Stir in diced carrots and chopped water chestnuts and cook for 2 to 3 minutes.
- Pour the sauce mixture into the skillet and cook for another 2 to 3 minutes until the sauce thickens and coats the chicken.
- Stir in chopped green onions.
- Spoon the warm filling into the butter lettuce leaves.
- Serve immediately and enjoy.
Notes
- Pat the lettuce leaves dry before serving so the wraps stay crisp.
- Finely chop the vegetables so the filling stays compact inside the lettuce cups.
- The filling can be made ahead and reheated gently before serving.
- Add chili sauce if you prefer a spicy kick.
