Description

A rich and creamy Chicken Korma made with tender chicken simmered in yogurt, coconut milk, and warm aromatic spices. This comforting dish delivers deep flavor with a smooth golden sauce that feels indulgent yet perfectly balanced.

  • 1.5 pounds boneless skinless chicken thighs, cut into bite-sized pieces
  • 1 cup plain full-fat yogurt
  • 1 cup coconut milk
  • 1 large yellow onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tablespoon freshly grated ginger
  • 2 teaspoons garam masala
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 2 tablespoons tomato paste
  • 1/4 cup sliced almonds
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper

Instructions

  1. In a bowl, mix the yogurt with garam masala, turmeric, cumin, coriander, salt, and black pepper. Add the chicken pieces and coat well. Let it marinate for 10 minutes.
  2. Heat vegetable oil in a heavy-bottomed skillet over medium heat.
  3. Add the chopped onion and sauté for about 5 minutes until soft and lightly golden.
  4. Stir in garlic and ginger and cook for 1 minute until fragrant.
  5. Add tomato paste and cook for 2 minutes, stirring to deepen the flavor.
  6. Add the marinated chicken along with any remaining yogurt mixture and stir gently.
  7. Pour in coconut milk, bring to a gentle simmer, cover, and cook for 20 to 25 minutes, stirring occasionally, until the chicken is tender and fully cooked.
  8. Stir in sliced almonds and cook uncovered for 5 minutes to slightly thicken the sauce.
  9. Garnish with fresh cilantro and serve warm.

Notes

  • Keep the heat at a gentle simmer to prevent the yogurt from separating.
  • If the sauce becomes too thick, add a small splash of warm water to loosen it.
  • Lightly toast the almonds before adding for deeper flavor.
