- 1 pound chicken breast, diced
- 1 pound gnocchi, fresh or store-bought
- 2 cups butternut squash, peeled and cubed
- 2 cups kale, chopped with stems removed
- 3 tablespoons olive oil
- 3 garlic cloves, minced
- 1 teaspoon dried thyme or 1 tablespoon fresh
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper, freshly cracked
- 1/2 cup Parmesan cheese, freshly grated
Instructions
- Preheat your oven to 425°F and line a baking sheet with parchment paper.
- Toss the cubed butternut squash with 1 tablespoon olive oil, salt, and pepper. Spread on the baking sheet and roast for 20–25 minutes until golden and tender.
- Meanwhile, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add diced chicken, season with salt, pepper, and thyme, and cook until golden brown and fully cooked through. Remove and set aside.
- In the same skillet, add another tablespoon of olive oil, then sauté the minced garlic until fragrant. Add the gnocchi and cook until lightly golden and crispy.
- Add the kale to the skillet and sauté for 2–3 minutes until just wilted.
- Return the chicken and roasted squash to the pan. Stir gently to combine and heat through.
- Sprinkle with Parmesan cheese, adjust seasoning to taste, and serve warm.

- Roast squash until edges caramelize for extra flavor.
- Use refrigerated or frozen gnocchi for best texture.
- Add a splash of cream for a richer, silkier finish.
