Description

Ingredients

  • 1 pound chicken breast, diced
  • 1 pound gnocchi, fresh or store-bought
  • 2 cups butternut squash, peeled and cubed
  • 2 cups kale, chopped with stems removed
  • 3 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme or 1 tablespoon fresh
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper, freshly cracked
  • 1/2 cup Parmesan cheese, freshly grated

Instructions

  1. Preheat your oven to 425°F and line a baking sheet with parchment paper.
  2. Toss the cubed butternut squash with 1 tablespoon olive oil, salt, and pepper. Spread on the baking sheet and roast for 20–25 minutes until golden and tender.
  3. Meanwhile, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add diced chicken, season with salt, pepper, and thyme, and cook until golden brown and fully cooked through. Remove and set aside.
  4. In the same skillet, add another tablespoon of olive oil, then sauté the minced garlic until fragrant. Add the gnocchi and cook until lightly golden and crispy.
  5. Add the kale to the skillet and sauté for 2–3 minutes until just wilted.
  6. Return the chicken and roasted squash to the pan. Stir gently to combine and heat through.
  7. Sprinkle with Parmesan cheese, adjust seasoning to taste, and serve warm.

Notes

  • Roast squash until edges caramelize for extra flavor.
  • Use refrigerated or frozen gnocchi for best texture.
  • Add a splash of cream for a richer, silkier finish.
