Description

A comforting and elegant chicken fricassée with tender chicken pieces simmered in a creamy sauce with sweet shallots and fresh herbs.


Ingredients

  • 6 chicken thighs, bone-in and skin-on
  • 10 whole shallots, peeled
  • 3 garlic cloves, whole
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 4 sprigs fresh thyme
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons flour

Instructions

  1. Season the chicken with salt and black pepper, then lightly coat with flour.
  2. Heat a large skillet over medium heat and add olive oil and butter.
  3. Place the chicken in the pan and cook until lightly golden on both sides.
  4. Add the shallots and garlic to the skillet and cook briefly.
  5. Pour in the chicken broth, add thyme, cover, and simmer for 25 minutes until the chicken is tender.
  6. Stir in the heavy cream and allow the sauce to thicken slightly.
  7. Sprinkle with fresh parsley and serve warm.
