- 6 chicken thighs, bone-in and skin-on
- 10 whole shallots, peeled
- 3 garlic cloves, whole
- 2 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons butter
- 1 tablespoon olive oil
- 4 sprigs fresh thyme
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons flour
Instructions
- Season the chicken with salt and black pepper, then lightly coat with flour.
- Heat a large skillet over medium heat and add olive oil and butter.
- Place the chicken in the pan and cook until lightly golden on both sides.
- Add the shallots and garlic to the skillet and cook briefly.
- Pour in the chicken broth, add thyme, cover, and simmer for 25 minutes until the chicken is tender.
- Stir in the heavy cream and allow the sauce to thicken slightly.
- Sprinkle with fresh parsley and serve warm.
