Description

This Chicken Doner Kebab is a flavorful and juicy Turkish-inspired dish made with marinated chicken thighs, yogurt, and spices. Cooked until tender and served with pita bread, fresh veggies, pickles, and fries, it’s the ultimate street food brought to your kitchen.


Ingredients

  • 2 lb boneless skinless chicken thighs
  • 1 yellow onion, grated
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 3 tablespoons whole milk yogurt
  • 1 1/2 tablespoons tomato paste
  • 1 teaspoon oregano
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon Aleppo pepper

To serve:

  • Pita or sub bread
  • Tomatoes
  • Pickled cucumbers
  • Sumac onion
  • Fries

Instructions

  1. In a large bowl, combine grated onion, olive oil, garlic, yogurt, tomato paste, oregano, salt, black pepper, and Aleppo pepper. Mix well to form a marinade.
  2. Add chicken thighs to the marinade, coating them thoroughly. Cover and refrigerate for at least 4 hours or overnight for best flavor.
  3. Preheat grill, skillet, or oven to medium-high heat. Cook the chicken thighs for 6–8 minutes per side, until fully cooked and slightly charred. Internal temperature should reach 165°F (74°C).
  4. Once cooked, let the chicken rest for 5 minutes, then slice thinly.
  5. Assemble the doner kebabs by filling pita or sub bread with sliced chicken, tomatoes, pickled cucumbers, and sumac onions.
  6. Serve with fries on the side and enjoy warm.

Notes

  • For authentic flavor, marinate the chicken overnight.
  • Chicken can also be cooked on a vertical rotisserie if available.
  • Serve with garlic sauce, tahini, or yogurt sauce for extra richness.
  • Leftover chicken is great for rice bowls or wraps.
