- 2 cups cooked chicken breast, shredded or diced
- 1 large ripe avocado, diced
- 1 cup cherry tomatoes, halved
- 1 cup corn kernels, cooked
- 1 cup black beans, rinsed and drained
- 1/2 cup ranch dressing
- 1 cup shredded romaine lettuce
- 4 large flour tortillas
- 1 tablespoon olive oil, for pan-toasting
Instructions
- Heat a skillet or grill pan over medium heat.
- In a large mixing bowl, gently combine chicken, avocado, cherry tomatoes, corn, and black beans.
- Brush the skillet lightly with olive oil and keep warm.
- Lay tortillas flat. Add a layer of lettuce, the chicken mixture, and drizzle ranch dressing over top.
- Roll burritos tightly, tucking in the sides as you go.
- Place burritos seam-side down on the skillet and toast until golden brown on both sides, about 2–3 minutes per side.
- Let rest for a minute, then slice in half and serve with extra ranch or salsa if desired.
Notes
- Warm tortillas slightly before filling to avoid tearing.
- Drain beans and corn to prevent sogginess.
- Don’t overfill to keep the burrito easy to roll and toast.
