Description

Chicken and Peppers is a simple, flavorful dish where tender chicken pieces are sautéed with colorful bell peppers and seasoned with garlic and herbs. It’s a quick, healthy meal perfect for any weeknight.


Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, sliced
  • 3 bell peppers (red, yellow, green), sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Optional: fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the sliced chicken and cook until browned and cooked through, about 6-8 minutes.
  3. Remove chicken from skillet and set aside.
  4. In the same skillet, add a bit more oil if needed and sauté the onions and garlic until softened.
  5. Add the sliced bell peppers and cook until tender, about 5-7 minutes.
  6. Return the chicken to the skillet, sprinkle with oregano, salt, and pepper, and stir to combine.
  7. Cook for another 2 minutes to blend flavors.
  8. Garnish with fresh parsley before serving.

Notes

  • Use chicken thighs for juicier meat.
  • Add crushed red pepper flakes for heat.
  • Serve over rice, pasta, or in tortillas for a wrap.
