- 1 lb boneless, skinless chicken breasts or thighs, sliced
- 3 bell peppers (red, yellow, green), sliced
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- Optional: fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add the sliced chicken and cook until browned and cooked through, about 6-8 minutes.
- Remove chicken from skillet and set aside.
- In the same skillet, add a bit more oil if needed and sauté the onions and garlic until softened.
- Add the sliced bell peppers and cook until tender, about 5-7 minutes.
- Return the chicken to the skillet, sprinkle with oregano, salt, and pepper, and stir to combine.
- Cook for another 2 minutes to blend flavors.
- Garnish with fresh parsley before serving.
Notes
- Use chicken thighs for juicier meat.
- Add crushed red pepper flakes for heat.
- Serve over rice, pasta, or in tortillas for a wrap.
