Description

Chicken and Avocado Quesadillas are a quick and satisfying meal packed with melty cheese, tender chicken, and creamy avocado. Perfectly crisp on the outside and gooey inside, they’re great for lunch, dinner, or even a hearty snack.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 ripe avocado, sliced or mashed
  • 1 1/2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 4 large flour tortillas
  • 1 tablespoon olive oil or butter, for cooking
  • Salt and pepper, to taste
  • Optional: lime juice, chopped cilantro, diced tomatoes, sour cream, or hot sauce for serving

Instructions

  1. Heat a large skillet over medium heat and lightly grease with olive oil or butter.
  2. Place one tortilla in the skillet. On half of the tortilla, layer cheese, shredded chicken, avocado, and season with salt and pepper.
  3. Fold the tortilla over to enclose the filling.
  4. Cook for 2–3 minutes per side, or until golden brown and the cheese is melted.
  5. Remove from the skillet and repeat with the remaining tortillas and filling.
  6. Slice into wedges and serve warm with your favorite toppings.

Notes

  • Use rotisserie chicken for an easy shortcut.
  • Mash the avocado if you prefer a smoother texture inside the quesadilla.
  • Experiment with add-ins like sautéed onions, jalapeños, or black beans for extra flavor.
  • Great for meal prep — assemble ahead and cook just before eating.
