Chicken and Avocado Quesadillas are a quick and satisfying meal packed with melty cheese, tender chicken, and creamy avocado. Perfectly crisp on the outside and gooey inside, they’re great for lunch, dinner, or even a hearty snack.

- 2 cups cooked chicken, shredded
- 1 ripe avocado, sliced or mashed
- 1 1/2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
- 4 large flour tortillas
- 1 tablespoon olive oil or butter, for cooking
- Salt and pepper, to taste
- Optional: lime juice, chopped cilantro, diced tomatoes, sour cream, or hot sauce for serving
Instructions
- Heat a large skillet over medium heat and lightly grease with olive oil or butter.
- Place one tortilla in the skillet. On half of the tortilla, layer cheese, shredded chicken, avocado, and season with salt and pepper.
- Fold the tortilla over to enclose the filling.
- Cook for 2–3 minutes per side, or until golden brown and the cheese is melted.
- Remove from the skillet and repeat with the remaining tortillas and filling.
- Slice into wedges and serve warm with your favorite toppings.
Notes
- Use rotisserie chicken for an easy shortcut.
- Mash the avocado if you prefer a smoother texture inside the quesadilla.
- Experiment with add-ins like sautéed onions, jalapeños, or black beans for extra flavor.
