Chewy Snickerdoodle Cookie Bars take all the cinnamon-sugar goodness of classic snickerdoodles and pack them into thick, soft, buttery bars. Easy to make and perfect for feeding a crowd!

- 1 cup (2 sticks) unsalted butter, softened
- 1 1/2 cups granulated sugar
- 1/2 cup packed light brown sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 2 3/4 cups all-purpose flour
- 1 teaspoon cream of tartar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- Topping:
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.
- In a large mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs and vanilla extract; mix until fully combined.
- In a separate bowl, whisk together flour, cream of tartar, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
- Spread the dough evenly into the prepared baking pan.
- In a small bowl, mix the topping sugar and cinnamon. Sprinkle evenly over the top of the dough.
- Bake for 25–28 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
- Cool completely in the pan before slicing into bars.
Notes
- Do not overbake—bars will continue to set as they cool.
- Add a pinch of nutmeg to the dough for extra warmth.
- Bars can be stored in an airtight container at room temp for up to 5 days or frozen for longer storage.
