Description

  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup maple syrup
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup chopped pecans
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together oats, flour, cinnamon, salt, and baking soda.
  3. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy. Add maple syrup, eggs, and vanilla extract, and mix until combined.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Fold in the chopped pecans and chocolate chips.
  6. Use a cookie scoop to drop dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 10–12 minutes, until edges are golden but centers still look slightly soft.
  8. Let cookies rest on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
