- 1 cup Cherry Coke (not diet)
- 1 1/2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1 cup chopped maraschino cherries (drained)
- 1 tablespoon cherry juice (from the maraschino jar)
- Optional: a few drops of red food coloring for a more vibrant color
Instructions
- In a saucepan over medium heat, simmer Cherry Coke until reduced to about 1/2 cup, concentrating the flavor. Let cool.
- In a large bowl, whisk together the heavy cream, milk, sugar, and vanilla extract until sugar is dissolved.
- Stir in the reduced Cherry Coke, cherry juice, and food coloring if using.
- Chill the mixture in the refrigerator for at least 2 hours or until fully cold.
- Pour into an ice cream maker and churn according to the manufacturer’s instructions (usually about 20–25 minutes).
- During the last 5 minutes of churning, add the chopped maraschino cherries.
- Transfer to an airtight container and freeze for at least 4 hours or until firm.
Notes
- Make sure the Cherry Coke is not diet, as artificial sweeteners can alter the texture.
- For added texture, fold in crushed cola-flavored candies or chocolate chunks.
- This ice cream pairs well with chocolate syrup or a cherry drizzle.
