- 4 medium zucchinis, sliced into thin rounds
- 1 medium onion, finely chopped
- 2 tbsp olive oil
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup sour cream
- 1/4 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 2 cloves garlic, minced
- 1 tbsp butter, melted
- Salt and black pepper, to taste
- 1 tsp dried Italian herbs (optional)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Heat olive oil in a skillet over medium heat. Sauté onion and garlic for 3-4 minutes until fragrant and softened.
- Add zucchini slices and cook for 5-6 minutes, stirring occasionally, until slightly tender. Season with salt, pepper, and Italian herbs if using.
- Transfer the zucchini mixture to the prepared baking dish. Stir in sour cream, cheddar, and mozzarella cheese until evenly combined.
- In a small bowl, mix breadcrumbs, Parmesan cheese, and melted butter. Sprinkle the mixture evenly over the top of the casserole.
- Bake for 25-30 minutes or until the top is golden brown and the casserole is bubbling.
- Let cool slightly before serving.
