Description

Crispy on the outside, tender on the inside — these cheesy vegetable fritters are packed with shredded veggies and melted cheese, making them a delicious and nutritious snack or side dish.


Ingredients

  • 2 cups shredded zucchini (excess moisture squeezed out)
  • 1 cup shredded carrot
  • 1/2 cup chopped green onions
  • 2 large eggs
  • 1/2 cup grated cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 1/2 tsp baking powder
  • Salt and black pepper to taste
  • Olive oil or vegetable oil for frying

Instructions

  1. In a large bowl, combine zucchini, carrot, and green onions.
  2. Stir in the eggs, cheddar, Parmesan, flour, baking powder, salt, and pepper. Mix until well combined into a thick batter.
  3. Heat oil in a skillet over medium heat.
  4. Scoop about 2 tablespoons of batter per fritter into the skillet, flattening slightly with a spatula.
  5. Cook 2–3 minutes per side or until golden brown and crispy.
  6. Transfer to a paper towel-lined plate to drain. Repeat with remaining batter.
  7. Serve warm with sour cream, yogurt, or a dipping sauce of your choice.

Notes

  • Make sure to remove as much moisture as possible from the zucchini to avoid soggy fritters.
  • You can swap in other veggies like corn, peas, or bell peppers.
  • These fritters reheat well in the oven or air fryer.
