- 2 cups shredded zucchini (excess moisture squeezed out)
- 1 cup shredded carrot
- 1/2 cup chopped green onions
- 2 large eggs
- 1/2 cup grated cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup all-purpose flour
- 1/2 tsp baking powder
- Salt and black pepper to taste
- Olive oil or vegetable oil for frying
Instructions
- In a large bowl, combine zucchini, carrot, and green onions.
- Stir in the eggs, cheddar, Parmesan, flour, baking powder, salt, and pepper. Mix until well combined into a thick batter.
- Heat oil in a skillet over medium heat.
- Scoop about 2 tablespoons of batter per fritter into the skillet, flattening slightly with a spatula.
- Cook 2–3 minutes per side or until golden brown and crispy.
- Transfer to a paper towel-lined plate to drain. Repeat with remaining batter.
- Serve warm with sour cream, yogurt, or a dipping sauce of your choice.
Notes
- Make sure to remove as much moisture as possible from the zucchini to avoid soggy fritters.
- You can swap in other veggies like corn, peas, or bell peppers.
- These fritters reheat well in the oven or air fryer.
