Description

A fusion snack combining the bold heat of Maharashtrian green thecha with melty cheese, all tucked inside crisp, golden puff pastry. Perfect for tea-time or party platters.

Ingredients

  • Puff Pastry Sheets: 1 pack (approximately 250 grams)
  • Green Thecha: 3 tablespoons
  • Grated Cheese: 1 cup (cheddar or processed cheese)
  • Milk or Cream: 2 tablespoons (for brushing)
  • Salt: a pinch (optional, depending on cheese)

Instructions

  1. Preheat Your Equipment: Preheat your oven to 200°C (392°F). Line a baking tray with parchment paper.
  2. Combine Ingredients: Mix green thecha and grated cheese in a bowl. Add a pinch of salt if needed.
  3. Prepare Your Cooking Vessel: Lay puff pastry on a floured surface. Roll slightly if too thick.
  4. Assemble the Dish: Cut into squares or rectangles. Add filling to half, cover with other half, and seal with fork.
  5. Cook to Perfection: Place on tray, brush tops with milk or cream, and bake for 18–22 minutes until golden.
  6. Finishing Touches: Let cool on a wire rack for a few minutes.
  7. Serve and Enjoy: Serve warm with chai or a tangy dip.

Notes

  • Use cold puff pastry for best flakiness.
  • Don’t overstuff to avoid leaks.
  • Brush tops for a beautiful golden finish.
