- 3 large russet potatoes, peeled and boiled
- 2 cups fresh spinach, sautéed and squeezed dry
- 1 cup ricotta cheese
- 1/2 cup shredded mozzarella
- 1/4 cup grated parmesan
- 2 garlic cloves, finely minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 cup cornstarch
- 1 cup breadcrumbs
Instructions
- Mash boiled potatoes in a large bowl. Mix in salt, pepper, paprika, and cornstarch until smooth and dough-like.
- In another bowl, combine spinach, ricotta, mozzarella, parmesan, garlic, olive oil, salt, and pepper to make the filling.
- Take a portion of potato dough, flatten into a rectangle, spoon some filling in the center, and wrap the dough around to form sticks.
- Roll each stick in breadcrumbs until fully coated.
- Heat oil in a frying pan over medium heat. Fry the sticks in batches, 2–3 minutes per side, until golden and crispy.
- Drain on paper towels and sprinkle lightly with sea salt.
- Serve warm with your favorite dipping sauce.
Notes
- Chill shaped sticks before frying for better structure.
- Squeeze spinach thoroughly to avoid soggy filling.
- Use fresh-grated cheese for best flavor and melt.
