Description

Creamy mashed potatoes, melted cheddar, and sautéed onions wrapped in soft tortillas and crisped to perfection. These cheesy potato burritos are comforting, customizable, and perfect for any meal.


Ingredients

  • 6 large flour tortillas (10-inch)
  • 3 cups mashed potatoes
  • 1 ½ cups shredded cheddar cheese
  • ½ cup sour cream
  • ½ cup diced onions
  • 2 green onions, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika

Instructions

  1. Heat a large skillet over medium heat and add 1 tablespoon of olive oil.
  2. In a mixing bowl, combine mashed potatoes, diced onions, garlic powder, salt, pepper, and half of the shredded cheese. Mix well.
  3. Sauté the diced onions in the skillet until translucent, then set aside.
  4. Lay each tortilla flat and add a scoop of the potato mixture in the center. Top with remaining cheese, sautéed onions, and a dollop of sour cream. Fold and roll into burritos.
  5. Wipe the skillet clean and heat again with a little oil. Cook the burritos seam-side down for 2–3 minutes per side until golden and crisp.
  6. Garnish with chopped green onions and a sprinkle of paprika before serving.

Notes

  • Warm tortillas before filling to make rolling easier.
  • Use leftover mashed potatoes to save time.
  • Adjust seasoning to taste for added flavor.
