- 1 teaspoon garlic powder
- 4 cloves garlic, minced
- 2 cups chicken broth
- 1 cup milk
- 8 oz penne or rotini pasta
- 1 cup grated Parmesan cheese
- 1 1/2 cups shredded mozzarella cheese
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add chicken, season with salt, pepper, and garlic powder, and cook until golden and cooked through, about 5–7 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and milk. Stir to combine and bring to a simmer.
- Add uncooked pasta to the skillet, making sure it’s submerged in the liquid. Cover and cook for 12–15 minutes, stirring occasionally, until pasta is tender.
- Stir in Parmesan and mozzarella cheeses until melted and creamy.
- Garnish with chopped parsley if desired and serve hot.
Notes
- Use rotisserie chicken for a quicker version.
- For extra richness, add a splash of heavy cream.
- You can substitute Parmesan with Asiago or Romano for a different flavor profile.
