Description

  • 4 boneless, skinless chicken breasts
  • 2 cups mushrooms, finely chopped
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme (or 1/2 tsp dried)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, melt butter over medium heat. Add mushrooms and sauté until soft and golden, about 5–6 minutes.
  3. Add garlic, thyme, salt, and pepper. Cook for another minute. Remove from heat and let cool slightly.
  4. Stir in mozzarella and Parmesan cheese to the mushroom mixture.
  5. Cut a deep pocket into the side of each chicken breast, being careful not to slice through.
  6. Stuff each chicken breast with the mushroom-cheese mixture. Secure with toothpicks if needed.
  7. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear chicken on both sides until golden, about 3–4 minutes per side.
  8. Transfer skillet to the preheated oven and bake for 15–20 minutes, or until chicken is cooked through (internal temp 165°F/74°C).
  9. Remove from oven, rest for 5 minutes, garnish with fresh parsley, and serve warm.

Notes

  • Use baby bella or cremini mushrooms for deeper flavor.
  • Feel free to add spinach or sun-dried tomatoes to the filling for variety.
  • If you don’t have an oven-safe skillet, transfer the chicken to a baking dish after searing.
  • To make it keto-friendly, serve with a side of cauliflower mash or sautéed greens.
