- 2 cups cooked chicken breast, sliced into thin strips
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a mixing bowl, toss the sliced chicken with chili powder, ground cumin, garlic powder, salt, and black pepper until evenly coated.
- Heat a large skillet over medium heat and lightly brush with olive oil.
- Place one tortilla in the skillet and sprinkle half of the cheddar and mozzarella evenly over one half of the tortilla.
- Add half of the seasoned chicken over the cheese and fold the tortilla over to create a half-moon shape.
- Cook for 3 to 4 minutes per side, until golden brown and crisp and the cheese is fully melted.
- Repeat the process with the remaining tortillas, cheese, and chicken.
- Remove from the skillet, let rest for 1 minute, slice into triangles, and serve warm.
Notes
- Cook on medium heat to allow the cheese to melt fully without burning the tortilla.
- Use freshly shredded cheese for the best melting texture.
- Do not overfill to prevent tearing and uneven cooking.
- Let the quesadillas rest briefly before slicing to keep the filling intact.
