- 1 large head cauliflower, cut into florets
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup milk
- 1/2 cup heavy cream
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 1/2 cups shredded sharp cheddar cheese, divided
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons grated Parmesan cheese
- Optional: chopped parsley or chives for garnish
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×9-inch baking dish.
- Bring a large pot of salted water to a boil. Add cauliflower florets and cook for 5–6 minutes until just tender. Drain well and set aside.
- In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for 1–2 minutes to form a roux.
- Slowly whisk in milk and heavy cream. Add garlic powder, onion powder, salt, and pepper. Simmer for 3–4 minutes until thickened.
- Stir in 1 cup of the cheddar cheese until melted and smooth.
- Place the cauliflower into the prepared baking dish. Pour the cheese sauce evenly over the top and gently stir to coat.
- Top with the remaining 1/2 cup cheddar, mozzarella, and Parmesan cheese.
- Bake for 20–25 minutes until bubbly and golden on top.
- Garnish with chopped parsley or chives before serving, if desired.
