Description

Cheesy Cauliflower Casserole is a rich, creamy, and comforting side dish that’s perfect for any meal. Tender cauliflower florets are baked in a luscious cheese sauce and topped with a golden, bubbly cheese layer — a low-carb alternative to mac and cheese that’s just as satisfying.

  • 1 large head cauliflower, cut into florets
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 1/2 cups shredded sharp cheddar cheese, divided
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese
  • Optional: chopped parsley or chives for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×9-inch baking dish.
  2. Bring a large pot of salted water to a boil. Add cauliflower florets and cook for 5–6 minutes until just tender. Drain well and set aside.
  3. In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for 1–2 minutes to form a roux.
  4. Slowly whisk in milk and heavy cream. Add garlic powder, onion powder, salt, and pepper. Simmer for 3–4 minutes until thickened.
  5. Stir in 1 cup of the cheddar cheese until melted and smooth.
  6. Place the cauliflower into the prepared baking dish. Pour the cheese sauce evenly over the top and gently stir to coat.
  7. Top with the remaining 1/2 cup cheddar, mozzarella, and Parmesan cheese.
  8. Bake for 20–25 minutes until bubbly and golden on top.
  9. Garnish with chopped parsley or chives before serving, if desired.

Notes

  • Use pre-cut cauliflower florets for quicker prep.
  • Add cooked bacon or diced ham for a heartier dish.
