Description

Cheesy Beef & Potato Burritos with Nacho Sauce are hearty, flavor-packed wraps loaded with seasoned ground beef, crispy potatoes, melty cheese, and a creamy nacho sauce. They’re the ultimate comfort food for lunch, dinner, or meal prep.

Ingredients

Scale
  • 1 pound ground beef
  • 1 tablespoon taco seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups frozen diced hash brown potatoes
  • 1 tablespoon olive oil
  • 1 cup nacho cheese sauce (store-bought or homemade)
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes (optional)
  • 46 large flour tortillas

Instructions

  1. Heat olive oil in a skillet over medium heat. Add diced hash brown potatoes and cook until golden and crispy, about 10–12 minutes. Set aside.
  2. In the same skillet, brown the ground beef over medium-high heat until fully cooked. Drain excess grease.
  3. Add taco seasoning, salt, and pepper to the beef. Stir to combine and cook for another 1–2 minutes. Remove from heat.
  4. Warm tortillas in the microwave or on a skillet for easier rolling.
  5. To assemble each burrito: layer beef, potatoes, shredded cheese, a spoonful of nacho cheese sauce, and diced tomatoes if using.
  6. Fold in sides and roll tightly into a burrito. Repeat with remaining ingredients.
  7. Optional: Toast burritos seam-side down in a skillet for 2–3 minutes for extra crunch.
  8. Serve warm with extra nacho sauce for dipping.

Notes

  • Use seasoned waffle fries or tater tots instead of hash browns for variety.
  • Swap ground beef for ground turkey or plant-based crumbles if desired.
  • Make it spicier by adding jalapeños or hot sauce.
