- 1 pound ground beef
- 1 tablespoon taco seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups frozen diced hash brown potatoes
- 1 tablespoon olive oil
- 1 cup nacho cheese sauce (store-bought or homemade)
- 1 cup shredded cheddar cheese
- 1/2 cup diced tomatoes (optional)
- 4–6 large flour tortillas
Instructions
- Heat olive oil in a skillet over medium heat. Add diced hash brown potatoes and cook until golden and crispy, about 10–12 minutes. Set aside.
- In the same skillet, brown the ground beef over medium-high heat until fully cooked. Drain excess grease.
- Add taco seasoning, salt, and pepper to the beef. Stir to combine and cook for another 1–2 minutes. Remove from heat.
- Warm tortillas in the microwave or on a skillet for easier rolling.
- To assemble each burrito: layer beef, potatoes, shredded cheese, a spoonful of nacho cheese sauce, and diced tomatoes if using.
- Fold in sides and roll tightly into a burrito. Repeat with remaining ingredients.
- Optional: Toast burritos seam-side down in a skillet for 2–3 minutes for extra crunch.
- Serve warm with extra nacho sauce for dipping.
Notes
- Use seasoned waffle fries or tater tots instead of hash browns for variety.
- Swap ground beef for ground turkey or plant-based crumbles if desired.
- Make it spicier by adding jalapeños or hot sauce.
