- 2 large or 4 small flatbreads (like naan or pita)
- 2 cups shredded cooked chicken
- 1/2 cup BBQ sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded sharp cheddar cheese
- 1 small red onion, thinly sliced
- 1 tablespoon olive oil
- 2 tablespoons chopped fresh cilantro
- Salt and pepper, to taste
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it.
- In a bowl, toss the shredded chicken with BBQ sauce until fully coated.
- Place the flatbreads on the prepared baking sheet and brush with olive oil.
- Top each flatbread with the BBQ chicken mixture, then add mozzarella and cheddar cheese evenly over the top.
- Scatter red onion slices on top of the cheese.
- Bake for 10–12 minutes, or until the cheese is bubbly and edges are golden.
- Remove from oven, sprinkle with fresh cilantro, and season with salt and pepper if needed.
- Slice and serve warm.
